I'm a vegetarian and was looking over Menu Plan Monday from last week for this week, and noticed you were from Dublin and you mentioned Sligo in your post...I went to Ireland this summer and loved Sligo! I got sick and we had to get off a bus in a random town which was Donegal and moved onto Sligo in the morning. We stayed in the most AMAZING B&B.

I want to be there.

I'm not a vegetarian but I am interested in gradually incorporating more vegetarian meals into my menu planning, so I'll be checking back on your blog regularly! :) We already eat black bean cakes (from the "Apocalypse Chow" cook book) as a main meal at least once a week and we LOVE them, so I know we can find more things we'll enjoy. I NEED my protein but I don't want to use cheese as a protein source, so finding some vegan recipes may fit the bill for us! I like beans and nuts as a protein; I find them to be satisfying. I'm curious about your bean ball, stuffed butternut squash, and walnut burger recipes!

Thanks!

Woo hoo - another veg at Menu Planning Monday! I like the gravy idea with the stuffed squash. I may have to steal that for this week...
