Oh, I really like how you made this with just veggies! I’m definitely going to have to save this recipe; all the paella recipes I’ve seen are way too loaded with fish. You’ve made this look so tasty, I can’t wait to try it .

It was delicious! The vegetable stock I had wasn’t great though (it was a knorr pouch of ready made stock), so I had to add a little paprika and some chilli powder just to give a bit more of a flavour. A definite thumbs up from me

@le craic Great! You’ll have to let me know how it goes. If there are any leftovers, it tastes even better the next day, the saffron really comes through. It was my first time using saffron in a dish and I loved it
